Made some elk snack sticks

A friend and I decided to make some elk and pork belly snack sticks today. Came out great for the first try.

-15#s of ground elk
-10#s of pork belly
-Seasoning and pink salt
-Half of the meat was mixed with high temp hot cheese

Cooked on the trager for about 5 hours

Anyone here have a recommendation for a meat grinder/sausage stuffer combo? We used a kitchenaid attachment to grind and a manual stuffer. Everything worked but we could have worked much faster and more efficiently.

I use the Hakka sausage stuffer. It works amazing.

Did some experimenting and found if I put the snack sticks in the dehydrator for about 90 minutes the clolgen wrapper tightened up and dried out more making the sticks much better. Put a little snap in the bites. Also found individual snack stick wrappers so its easier to pull one or two at a time instead of a whole pack
