I had both of my deer this year processed by Jim and I am very pleased with how everything turned out. I had jerky, smoked sausage links, bratwurst, and snack sticks and everyone has been very impressed with the flavor, even the granola eating friends loved it. They were expecting that gamie taste.
I highly recommend Jim at Smokehouse Meats on Wintergardens in Lakeside.
