Hey everyone! Does anyone have experience hanging their rabbits after gutting and before skinning? I know this is done with certain birds to improve flavor and tenderize. Thanks!
 
Friends I hunt with gut and skin the critters. When they prepare them for a meal, the entire rabbit goes in the dish. On occasion they will bring the pre prepared dish to our hunts for all to feast on. The problem I have is all the damn bones. I asked them why they don't just bone them out, they told me, that way waste to much meat. Now while I can appreciate that way of thinking, the bones in a rabbit are a pain in the ass, I spend half my time eating one of their dishes spitting out bones.
 
Oh okay. Thanks. Maybe use the carcass for a broth after taking meat off? Best of both worlds?

Grandma like to let them age in the fridge skin off for 4 to 6 days. I do the same.
