Elk Cali burrito’s

This is one of my favorite ways to cook an elk steak! I marinate 3-4#’s of meat and vac seal/freeze the rest.

3/4 cup orange juice
1/2 cup lemon juice
1/3 cup lime juice
4 garlic cloves minced
2 canned chipotle peppers, finely chopped… or more if you want it hotter.
1 tablespoon chili powder
1 tablespoon ground cumin
1 tablespoon paprika
1 tablespoon black pepper
1 tablespoon dried oregano
1 bunch fresh cilantro, chopped

Combine all ingredients then whisk in
1/2 cup olive oil.

Tenderize meat. Either pound and fork… or get a jaccard like @ilovesprig does.

Marinate at least 24 hours.

Cook steaks med rare and enjoy!!!

Looks good. What does half olive oil mean?
 
Solid marinade! Burrito looks killer!

@NBK I think he meant whisk the ingredients with 1/2 cup of olive oil.

Pro tip: buy a can of Chipotle sauce..usually found next to canned chipotles in adobo sauce and mix some of it into some sour cream with a dash of milk to thin it out add some salt and you got a killer chipotle crema. The chipotle sauce would also be great in the marinade.

Yes… that’s what I meant.

I do the same. Awesome on shrimp burritos.
