This weekend we re-asserted our right to bear arms. ;)
I had a couple of forequarters left from the bear I took last year with Neil and GSGS, and I thought they might do well as slow cooked BBQ. Dry rubbed, then hickory smoked for four hours in my new Green Mountain pellet smoker, then slow cooked overnight with a little vinegar, ketchup, water and BBQ sauce. I pulled out the bones this morning, pulled the meat, and added a pound of onion. I actually mixed in some venison shoulder I had in the freezer.
Right tasty!

Great idea Steve. If I run out, I'll make some more for the party.
I love this smoker, but I'm still getting used to it. Will get a photo up and a review out soon.

Sorry for the delay John. This is my first day home with enough light to take some pics. In case anyone was wondering, this bear was delicious! After smoking, I used the slow cooker because I didn't want to lose any of that stringy meat from the lower legs. After about 12 hours at low, moist heat, I just pulled out the bones. The tendons become part of the meal (they turn to gelatin). There's very little fat in it because that all dripped off during smoking. These pellet grills have gutters and a bucket for draining off and discarding the fat.

Those are great smokers Don. I was looking at these just the other day.
