Made some elk snack sticks

What temp did you run the Traeger?
 
Looks good! what fat % are you using?

*EDIT* looks like you did 40% pork belly. I use the costco pork belly in all my ground meat, but I only did like 18% in my first batch of sausage. Definitely a little dryer than typical.
 
Have you thought about adding canned chili's and / or cheese to the sticks? I picked up some of the high temp cheese for my brats and definitely recommend it. I am thinking about adding can diced jalepinos and habanero cheese to a batch...mainly so I have my own without the kids steeling it. LOL

I did hi temp spicy jack cheese. I will do some sort of peppers in the future
