I have a .308 Redding 3 die competition set that has a crimping die in it. In what case would I be using the crimping die in addition to the seating die when making my rounds? I have made over 1000 rounds with only the seating die and never had any issues, am I missing a step then?

Nope...you're good to go.

If you were loading the bullets in and out of magazines regularly or transporting the bullets in a loose container and not caring for them, then crimping might have an advantage.
