Anyone here do knife restorations?

I recently inherited some butcher knives that are roughly 100 years old. They belonged to my wife’s great grandfather who was a butcher in Warrensburg Missouri.

Anyway, my wife’s grandmother recently passed after a solid 97 years, and we found her fathers knives in a box sitting in the garage rafters. Nobody wanted them, and since apparently I’m the meat guy in the family, I got em. They’re not fancy, and quite utilitarian but I think it would be cool to clean them up and put some nice handles on them. And get them to a good cutting quality too.

These is an awesome knife shop on La Mesa Blvd in La Mesa. He sharpens my stuff if he can’t restore them he will know someone who will.

La Mesa huh... little bit of a drive for me, but not impossible.
 
I kinda like the idea of doing them myself, but I don’t have clue on where to start.
 
whats wrong with the existing handles? I would suggest to sand and polish them..
same with the blades. use a flat stone with different grades of emery,,, 60, 120, 400
keep it flat polish them up...
 
The rivets have green corrosion, and most of the wood is cracked.

Just thought it would be cool to customize them
