I had a couple of pork shanks sitting around in the freezer so I thought I'd cook them up for my son and his girlfriend. I browned the shanks, one onion and a couple cloves of garlic in some rendered pork fat that I keep on hand in the fridge. Then I added salt, pepper, rosemary, oregano, sweet paprika, and braised it several hours in Marsala wine. Once the meat was nice and tender, I added half cup of heavy cream, mushrooms and 2 large carrots. This would do well over rice or roasted baby potatoes, but I gave them a couple of sweet potatoes to bake. Got thumbs up in the review.
