Elk Taquitos

I decided to make something a little different and made some Taquitos with Elk stew meat. I used my regular recipe of 3 lbs of stew meat (Elk in this case), 1 tablespoon of red chili powder, 1 med red onion( finely diced), 2 teaspoons of salt, 1 tablespoon of granulated garlic, and 2/3 cup of water mixed thoroughly and cooked in a pressure cooker for 20 minutes. Once cooked the meat is shredded, rolled in corn tortillas and fried in vegetable oil. They came out great and tasted better than some beef taquitos that I made at the same time. Served with some homemade guacamole and a blue moon they were hard to beat.
