Good eats! Congrats! Try this, Fillet, remove red line, cut into one inch chunks, put chunks in a strainer or colander, put strainer with chunks in a pot of boiling saltwater until cooked through. Do not stir or chunks will fall apart. Dip chunks in melted butter...poor man's lobster! Leftovers (if there are any!) can be used to make great dips or striper-fish sandwiches!
