Jalapeno Duck

2 medium ducks, whole
2 fresh jalapeno peppers, seeded and sliced
4 ozs. olive oil
1 bunch green onions, chopped
2 stalks celery, chopped
2 onions, chopped
1 bell pepper, chopped
1 pkg. packaged brown gravy mix (blended with ½ cup water)
1 cup dry white wine
Make slices in duck breasts; stuff with jalapeno pieces. In a large skillet, heat olive oil and add ducks, breast side down. Cook for 12-15 minutes on medium heat. Turn and cook for 7 minutes. Remove ducks from skillet and place in a Dutch oven along with the green onions, celery, onions, bell pepper, gravy that has been blended with water, and wine. Bake in a 350-degree oven for 2 hours. Serve with rice. Makes 4 servings
