Pinwheel Rolled Elk Tenderloin

Cooked up some bacon wrapped pinwheel rolled elk tenderloin last night. Could have pulled it off about 3-4 minutes sooner but it was still amazing and ultra soft!

Had it with parmesan half baked brussel sprouts, broccoli salad and a "Never Better" double IPA!

I have been torn on how I want to cook mine but this looks like a winner!

Hopefully it will be just a few times more that I will have to buy venison.
