Oh man I love me some corned beef and cabbage for St Paddy's. My favorite thing growing up was, my grandpa would use the leftover corned beef and dice up some potatoes and bell peppers for hash. So good..

My wife makes it every Saint Patrick's Day, and I eat it just once a year. Along with a few Guinness it's not bad.

Now with the leftovers I can make some Rubin sandwiches, some rye bread, sauerkraut home made, swiss cheese and stone ground mustard. maybe a little thousand island dressing, just enough for the mess affect.
