Whole hog smoker

I've been wanting to smoke a whole hog for awhile, so I finally built a cinderblock smoker. Going to test it out this weekend with a 50# piggy.

This looks awesome Nick, would love to see the results. Are you direct feeding it underneath or did you set up a smoke box/piping system in parallel?

Direct smoke from underneath. I'll have a pile of coals in each corner, So I wont have direct heat under the pig for the most part. I'm going to use Peach wood for the Smoke. The good thing is, If i don't like how this works It'll be easy to add a smoke box to one of the ends.
 
Nice! Should be fun. You using any sort of insulation in the block or on the lid?

Nope not yet. I want to see how it does on this test pig. If I cant hold the temp or have a hard time getting to the temp I want, Then I'll look into lining the inside with foil.
 
IMG_1032.JPG IMG_1033.JPG So today is the day for the test piggy. Got up at 5:30am to do a final cleaning and prep work. Here he is at 52lbs.

Looks great. Wish I could smell it. Yuuuuum.
I was just telling my dad how this piggy smells just amazing. It honestly is the best smelling pork I've been around. Not sure if it was the cherry and maple wood or the rub, or the injection, that I'm smelling, but it's making me hungry
