Snow goose pastrami

Stacked up some snow geese last month for my first time and have been wanting to try making goose pastrami. I took a few breast out of the freezer and made a trial batch.

The process is overall pretty simple it just takes a handful of days to let the meat brine.

I went with a dry brine and combined a few recipes I came across and adjusted for the size of the breasts I had since snows are smaller then Canada geese. I might tweak the recipe a bit but overall I was really happy with the final product.

I look forward to sharing with friends and family over the holidays and the next time I'm in the duck blind with friends.
