    I'm more of a liver and heart guy, but yes gizzards are great in giblet gravy. A wild turkey gizzard takes a bit more effort to prep but it's cool to see inside what they've been eating.

    Its frozen for sure. I usually shoot a few jacks in the off season, which I plan on making chorizo with, but that won't use up much more fat. Maybe I'll make some summer sausage..
