Good eats! Congrats! Try this, Fillet, remove red line, cut into one inch chunks, put chunks in a strainer or colander, put strainer with chunks in a pot of boiling saltwater until cooked through. Do not stir or chunks will fall apart. Dip chunks in melted butter...poor man's lobster! Leftovers...

Here is the stocking schedule for the state. They are not doing as much as they used to. https://nrm.dfg.ca.gov/FishPlants/ Regional parks could be a good option if they have been stocked. Some receive plantings though the county or private companies in addition to the state, so calling ahead...
