Good eats! Congrats! Try this, Fillet, remove red line, cut into one inch chunks, put chunks in a strainer or colander, put strainer with chunks in a pot of boiling saltwater until cooked through. Do not stir or chunks will fall apart. Dip chunks in melted butter...poor man's lobster! Leftovers...
