Hunt with an ugly dog
So I have a bunch of tuna in the freezer from the best summer of fishing in a long time, what to do? Ground up about a pound of thawed chunks with a fresh jalapeño, cilantro from our garden, green onion, one egg, panko bread crumbs and a couple teaspoons of Soy Sauce.
Heated a little oil in the cast iron skillet 2 minutes on each side, put on an onion bun with Siriachi Mayonaise, fresh cole slaw, avocado slices, a squeeze of lime and a couple fried sweet Maui onion rings.
Not too bad, definitely different than the usual....
