Just made this with some elk, incredibly easy to make and clean up. I added hot sauce. Use your game meat of choice.

Love those burnt on the bbq with a little lemon and salt.
Also, for this recipe, I used way less oil then she used and it still came out great.
Modified it a little.
I used elk breakfast sausage, cheese, gravy and butter in the pan instead of oil. I liked this even better. I love how quick and easy it is to make.

We did it tonight. Subbed cilantro for the parsley and threw in some shredded cheese. Delish! Boys devoured it. Calling it Chalupa de cazador
