My plan was 1/2 cased 1/2 uncased. But the package for the casings had a hole in it so we bypassed the casings.

Cased.. uncased.. they'll go just fine on a roll with peppers and onions. Yum.

I didn’t add any fat other than what was on the pork roasts that I cut up to mix in.
16 pounds venison with 9 pounds of pork.
