Smoked upland enchiladas

Cooked on the smoker -

Assembled with:
Pan seasoned chicken (usually use quail or pheasant)
Sauteed garlic and onion
Strips of charred pasilla chillies
Monterey Jack cheese
Cheddar cheese
Corn tortillas
Smothered in fresh Hatch green chillies (personally transported)

Never thought of smoking something like that. Do you like it a lot more than just with the oven?
 
It only adds a subtle smoke flavor. And yes, I enjoy it. We do pies, bread and anything you can cook in an oven on on our pellet smoker.
Why did I not know this sooner?!! Some type of smoked elk pot pie sounds incredible.
