Made this again with some elk I brought back from my recent trip to Idaho..man this dish does not disappoint! Topped with some crispy onions this time..can't wait to pay $36 for an elk tag and have access to all that meat!
I definitely need to try that..I added some Ortega roasted green chillies but they don't have enough heat for me. I will try the NM green chili next time forsure
