Trying to clean out my freezer before fall season, I made a batch of breakfast sausage with the rest of my rabbits and a few turkey legs. And then, some McMuffins this morning.. awesome. If you've never made breakfast sausage before, it's super quick and easy. I double grind at a fat ratio a bit under 50% (pork fat and bacon ends) with a whole bunch of sage, thyme, fresh garlic, salt and pepper, and maple syrup. Make into patties, flash freeze, and then vacuum seal. Throw it on an English muffin with some eggs, cheese, and some spicy ketchup and you're good to go.
