They use the actual buck you harvest. When I brought mine in, they had 3 others. There's DFW paperwork that they have to fill out and they keep your tag with the meat in case they get inspected. They did a very good job processing my deer, I'm just not a huge fan of the breakfast sausage they made, not enough seasoning in it for my tastes. If I had a grinder it would be pretty easy to re-mix it. I had them keep the long bones for me and sawed them into sections for my dogs.Do butchers use the actual buck you take in or do they just go by pounds ... asking for a friend since I haven't harvested a buck in a few years
