Let's see some of those "16" bucks

Do butchers use the actual buck you take in or do they just go by pounds ... asking for a friend since I haven't harvested a buck in a few years ;)
They use the actual buck you harvest. When I brought mine in, they had 3 others. There's DFW paperwork that they have to fill out and they keep your tag with the meat in case they get inspected. They did a very good job processing my deer, I'm just not a huge fan of the breakfast sausage they made, not enough seasoning in it for my tastes. If I had a grinder it would be pretty easy to re-mix it. I had them keep the long bones for me and sawed them into sections for my dogs.
