IMHO there is nothing better to eat than quail !
There are only 2 birds , quail and pheasant, that I will gut and pluck whole.
For quail, fried like chicken with crushed red peppers added in flour batter. And my favorite is quail marinated in a good red cooking wine; cooked in the oven on very hi heat for 10 minutes, then finished on the Bbq till done .
Last time I was in Arizona we went to Pappadeaux’s; I was craving and thinking about their Southern Fried Quail for weeks prior to the trip. Only to get there to find they had removed it from the menu. My wife had to laugh at me about how bummed I was about that !
